Recipe of the month: Ceviche

In our family travels living in Chile, I came across a dish that I never thought I could possibly enjoy.

You see, I am not a fan of raw fish dishes (please don’t invite me out for sushi, ick!).

However, I am a proponent of the rule: “you have to have at least one taste” and not just for my kids. We loved to treat ourselves occasionally to a nice dinner at this little fish joint on the coast in San Antonio, Chile. Everything was always delicious and one night someone ordered their ceviche.

Raw fish? Oh boy… but I had to follow my rule. Who would have thought it would become one of our family’s favorites.

This ceviche is a very simple recipe with few ingredients. We like to serve with a sliced French baguette brushed with olive oil and toasted in the oven.

It’s meant to be an appetizer, but we often will make it a meal!

Prep time: 10 -15 minutes

Time to marinate: 30 minutes

Ingredients:

  • 2-3 filets of Tilapia or other light, white fish
  • 4- 6 Fresh Lemons
  • 1 large onion
  • 1 bunch cilantro
  • Salt and Pepper to taste

Instructions:

  • Cube the fish into small pieces
  • Chop the onion fine or put through a food processor
  • Chop the cilantro fine or put through a food processor
  • Mix onion, cilantro and fish in a shallow dish
  • Cover with lemon juice
  • Let sit until the fish “cooks” in the lemon juice (fish will turn white as if when cooked)
  • Stir now and then to ensure all pieces are marinated evenly

Caveat: We really like this dish lemony, but you can adjust the amount to lemon to your liking. We also really enjoy the raw onion, but this too can be adjusted.
